
Why We Use Medium Wave Infrared in Our Ovens
Most convection ovens have a annoying habit of making you wait. They spend forever heating up the air before the food even feels a thing. It’s a bottleneck that slows everything down. We decided to skip that part entirely. Instead of heating the air, we use medium wave infrared (MWIR) emitters. The “Sweet Spot” of Heat
Here is the thing about infrared: not all wavelengths are created equal. Short-wave heaters can be a bit too aggressive; they either bounce off the surface or dive too deep, too fast. Medium wave is different. It hits the exact frequency that water and fats in food love to absorb. This means you get a deep, consistent cook that reaches the core without turning the outside into a charcoal briquette. To make this work, we use high-purity quartz tubes. Why? Because quartz doesn’t freak out when the temperature jumps from zero to a hundred in a split second. It handles that thermal shock like a pro, which is why you don’t need a long warm-up cycle.
Getting the Hardware Right
If you’re running a busy commercial kitchen, you need serious heat density. We focus on the wattage per centimeter so we can keep the oven footprint small without sacrificing power. If you want total control, you can hook these up to a PID controller. That lets you dial in specific temperature zones so you aren’t just guessing. But a word of caution: these lamps runhot. Really hot. You have to make sure your power supply matches the voltage perfectly, and your ventilation has to be spot on. If your reflectors are slightly off-center, you aren’t just wasting electricity—you’re risking warping your chassis.
The Trade-offs
Nothing is perfect. While MWIR is incredibly fast, it’s directional. A convection fan pushes heat into every nook and cranny, but IR only heats what it can “see.” If you just throw food in haphazardly, you’ll end up with cold spots. You have to be intentional about where you place your lamps. To get the most out of the system, we use gold-plated or polished aluminum reflectors. It keeps the energy focused right where it belongs: on the food.
